New Year's Prime Rib Roast

It's a Bootheel 7 Ranch tradition to roast up a Prime Rib for New Year's Day when we're all together and could use something in our stomachs if you know what we mean.   This incredibly simple roast recipe is from Jake's mother on the Kugler side of the family, as part of our first annual Recipe Swap.  

Ingredients

  • Salt and pepper
  • Bootheel 7 Prime Rib of any size

Instructions

  1. Season Prime Rib with salt and pepper to taste on all sides.  Let Prime Rib sit until room temperature.
  2. Pre-heat the oven to 375 degrees (400 at high altitude).  Place Prime Rib in oven and cook for one hour.
  3. Turn the oven off while keeping the Prime Rib in the oven.  Be sure to keep the oven door CLOSED!
  4. 45 minutes before serving, turn the oven to 300 degrees (325 at high altitude) and continue to cook.
  5. Remove the Prime Rib from the oven after 45 minutes and let sit for 30 minutes.
  6. Slice and serve.  Cooked this way the Prime Rib will be a juicy medium-rare and perfect every time!
