1 yellow onion, thinly sliced and caramelized *optional*
Preheat oven to 350 degrees. Cook bacon until crispy and dice into small pieces. Keep small amount of bacon fat to cook onion.
In a large bowl, mix together ½ the diced bacon, B7R ground beef, red bell pepper, red onion, garlic, flour, panko, mushrooms, relish, both mustards, salt, garlic powder, and 1 egg. Mix until well combined. Press mixture into 9x5 loaf pan and bake for 1 hour 15 minutes.
When the meatloaf goes in the oven, add thinly sliced onion to the pan with bacon fat and let cook down until caramelized, approx. 15 minutes.
Once meatloaf is cooked through, remove from oven and let cool. Top with caramelized onion, shredded cheese, bacon, jalapeños, mustard, and enjoy!
